Everyone loves pizza–even bad pizza. We’ve all had some rank pizza a time or two and complained about how bad it was while still eating it. We’ve even gone back to the establishment of said heinous pizza purveyors time and time again. That’s because we know that we can’t judge their convenient dinner option, especially when none of us are willing to make our own god damn pizza at home. No, that frozen shit doesn’t count. How lazy have we gotten?
Here’s your chance to start small. Get off of your fucking ass and try these easy canned biscuit pizza muffins. Whoever the fuck you live with will thank you.
Preheat your oven to 350°F. Brush the muffin tin with olive oil, about 3 tablespoons. Cut the canned biscuits into quarters and dump ’em into a large mixing bowl. Add the Italian seasoning, sugar, salt, and 2 tablespoons of olive oil and knead the ingredients into the dough. Separate the dough evenly between the 12 muffin spaces and press into the bottom and up the sides of each muffin cup.
Spoon in the marinara, about 1 cup of sauce spread evenly between each of the dough cups. Sprinkle 1/2 of the mozzarella cheese into each cup evenly. Add your toppings then sprinkle each cup with the rest of the mozzarella cheese.
Throw the pizzas into the oven and bake for about 12 – 15 minutes (longer depending on your oven), or until the dough is golden brown and the cheese is bubbly. Remove the pizzas from the oven and let them sit for 5 minutes before removing them from the muffin tin. Top with fresh basil and serve with extra marinara or ranch for dipping.
